3 Meals I Make When I Have 20 Minutes and Zero Energy

Some days, I have a plan.

Some days… it’s 5:42 PM, everyone’s hungry, and I have absolutely no desire to cook.

Those are the days that matter most.

Because if your food only works when you have time and energy, it’s not actually working for you.

Here are three meals I fall back on over and over again.

1. Chicken + Pan + Done

  • Chicken breasts or tenders

  • Salt, pepper, garlic

  • Hot skillet

Cook it. Flip it. Done.

Serve with:

  • Bagged salad

  • Frozen veggie

  • Whatever is already in your fridge

No thinking required.

2. Chicken Tacos (That Don’t Feel Like Work)

  • Thighs or leftover chicken

  • Taco seasoning

  • Tortillas

Heat, shred if needed, assemble.

That’s it.

This works because:
Good chicken doesn’t need much help.

3. “Everyone Figure It Out” Dinner (That Still Works)

This is where eggs come in.

  • Scrambled eggs

  • Toast

  • Fruit

Or:

  • Chicken chopped into a quick bowl

  • Rice if you have it

  • Sauce from the fridge

Not every meal needs to be impressive.
It just needs to feed your family.

The Real Secret

The reason these meals work isn’t because they’re fancy.

It’s because the ingredients are doing the heavy lifting.

When your chicken cooks well, tastes good, and reheats right… everything gets easier.
